I want to ask of american, monolingual, multicultural chefs who’ve cooked and learned to cook abroad: were you scared of not knowing the language, the people?

I think of living somewhere as having a stone set on the floor that you come back to however frequently/infrequently.

The immigrant experience is like lifting that stone and setting it elsewhere.

No matter how many times physically or mentally you revisit the space of your own stone, something has changed.

my grandpa moved from Guadalajara to Tijuana to City of Commerce so as far as I’m concerned traveling is in my blood. I think to leave and not come back is the pinnacle, the zenith of the “travel” mindset.
